Mild and Tasty Salsa
Imagine that in Mexico, if you are making a really authentic salsa, you use a heavy
pestle and mortar from a volcanic stone. This wonderful device is called “Molcajete”
and it really gives the salsa a special taste and texture.
We would get in trouble with Environmental Health if we started using a molcajete
as we would never be able to sterilise it. So... we have substituted the molcajete
with a blender but other than that, Rico Mexican Kitchen does follow a traditional
recipe to make our salsas. That’s why they are kind of rustic, we add char- grilled
tomatoes, chunky onion and fragrant coriander. Fascinating that the Aztecs and Mayans
will have eaten similar stuff!
The very essence of Mexican cuisine lies in its salsas. Popular but often misunderstood
in the UK, salsas are often far too sweet and gloopy to use in any other way than
a dip. Good salsas have, however, loads of uses beyond dips; they are really versatile.
