Traditional Mexican Mole Sauce for Cooking
Mole is regarded as the Mexican National dish. The name derives from the Nahuatl-
the language of the ancient Aztecs- and simply means ’concoction’ or ‘sauce’. There
are many types of Mole sauces in Mexico, the most popular is from the region of
Puebla, and because of this, that type of mole is called “Mole Poblano”. Rico Mexican
Kitchen cooking sauce is Mole Poblano, and we’d like to bring more varieties.
A good Mole has over 25 ingredients and takes hours to prepare. We have taken the
hard work out of making Mole so you can use this delicious sauce and achieve perfect
results every time.
Mole is made from a base of three types of chilli, Ancho, Pasilla and Mulato, which
combine to give a wonderful, smoky, earthy flavour. These are mixed with nuts and
seeds adding a cornucopia of spices and at the end, a touch of cacao. This combination
of flavours is rich and complex, with a hint of chilli and a mellow level of heat,
and the texture is luxurious.
Don’t be put off by the fact there is a small amount of chocolate, give it a go
because it’s really really nice...
Simple steps to prepare Rico Mexican Kitchen Mole Sauce for Cooking:
- Cook 200g of meat, or tofu /diced veg for a vegan option. When cooked, add the Mole
cooking sauce and let it simmer for a few minutes. Serve with rice, Spicy Beans
and warm tortillas. Serves 2.
- To make enchiladas, cook the enchilada filling of your choice, roll the filling
into warm tortillas and pour hot Mole sauce over them- use 100% maize tortillas
if you can. Toss a bit of crumbly cheese or sesame seeds.

Ingredients: Water; Tomatoes; Onion; Chiles (Mulato, Ancho, Pasilla) 8%; almonds;
peanuts; raisins; sesame seeds; sunflower oil; spices; dark and fairly traded chocolate
(sugar, cocoa liquor, cacao butter, fairly traded cocoa powder, emulsifier: soy
lecithin) 2%; garlic; sea salt.
